Some days it’s difficult to decide between our good side and our bad side. How about a simple, low maintenance recipe that can quench either side’s desires?

After a long, hard day at work you can either sit down to a creamy, rich comfort food, or have a healthy meal without the guilt. What comfort food, you ask? Chicken Pot Pie. There is so much flexibility in this recipe; you can always have it exactly your way. How often does that happen in life?!

Gluttonous Chicken Pot Pie Tips:
* If you use skinless chicken, you’ll want to bread it (as the recipe states) before frying it. However, if you use skin-on chicken, you can skip the breading process and just fry it. You can bread it for an extra sinful night!
* The broth, flour, and cream/milk combination is very flexible. You can play around with the amounts to make thicker or thinner filling.
* Feeling red hot? Add some paprika and red pepper flakes to the pan when frying the chicken.

Lighter Chicken Pot Pie Tips:
* You can use all fresh vegetables, or canned. However, if you use canned vegetables, you’ll want to cut down on any salt or celery salt (due to the sodium from canning).
* The broth and flour combination is very flexible. You can play around with the amounts to make thicker or thinner filling.
* Feeling hospitable? Double this recipe, plate it in a large glass pan, and serve to friends and family!

Gluttonous Chicken Pot Pie
Ingredients:
– 2 chicken breasts
– ½ cup breadcrumbs
– 1 egg
– 4 Tbs. olive oil
– 1 large carrot
– ¾ cup corn
– 1 large potato, cubed
– ¼ cup peas
– ½ cup all-purpose flour
– 14 oz. chicken broth
– ½ cup milk or cream
– 2 pie crusts
– To taste: parsley, salt, pepper, minced garlic, minced onion, celery salt

Directions:
1. Whisk egg in bowl. Set breadcrumbs on a plate. Dip each chicken breast in egg, then breadcrumbs to coat.
2. In pan over medium-high heat, heat olive oil. Once hot, add breaded chicken and fry. When chicken is cooked through, cut into cubes and set aside.
3. Put a pot over medium-high heat. Add carrot, corn, potato, and peas. Once vegetables are heated, add milk/cream and broth. Bright to a light boil; slowly stir in flour. (If you would prefer, use corn starch as a thickener). Add in seasonings to taste. Remove from heat.
4. Spray the bottom of a pie pan with non-stick spray. Lay the bottom pie crust. Spoon in the vegetable/gravy filling and lay fried chicken over the top. Lay the second pie crust over the top, pinch edges to seal, and add a steam hole.
5. Cook at 350 degrees for 45-60 minutes, or until golden brown.

Lighter Chicken Pot Pie
Ingredients:
– 2 skinless chicken breasts
– 1 Tbs. olive oil (optional)
– 2 medium carrots
– ½ cup corn
– 1 large potato, cubed
– ½ cup peas
– ½ cup whole wheat (or unbleached) flour
– 14 oz. unsalted chicken broth
– 2 pie crusts
– To taste: parsley, salt, pepper, minced garlic, minced onion, celery salt

Directions:
1. In a pan over medium-high heat, cook chicken with olive oil, salt, and pepper. Shred or cube chicken, set aside.
2. Put a pot over medium-high heat. Add carrots, corn, potatoes, and peas. Once vegetables are heated, add broth and seasonings to taste. Bright to a light boil and slowly stir in flour.
3. Spray the bottom of a pie pan with non-stick spray. Lay the bottom pie crust. Spoon in the vegetable/gravy filling and lay chicken over the top. Lay the second pie crust over the top, pinch edges to seal, and add a steam hole.
4. Cook at 350 degrees for 45-60 minutes, or until golden brown.
